Let’sLive Coconut Sugar is 100% naturally extracted from farms in Tamilnadu. This raw sugar is actually sap collected from the flowering stem of coconut trees. Sweet sap is then boiled until the moisture in it is evaporated. The resultant crystals are brown in color and are powdered as coconut sugar. I am Vignesh, a coconut farmer from Udumalpet near Pollachi, Tamilnadu. Our farm is famous for our handmade Coconut Sugar and Coconut Jaggery. Once Coconut trees that are around 5yrs or older start flowering they are cut before they become fruits. We place earthen pots near the flower cuts. Sweet sap flows out of the cut and everyday morning we collect this sap and boil it to make coconut sugar. Although climbing tall trees is a little risky, we are used to hard work and are happy that we can bring out a handmade value-added product. Please buy our product and encourage us.
BANANA CAKE USING COCONUT SUGAR
Ingredients
4 overripe banana
1/2 cup Let'sLive Coconut Sugar
1/4 tsp vanilla essence
1/2 cup Let'sLive Groundnut Oil
3/4 cup wheat flour
3/4 cup maida
1tsp baking powder
1tsp baking soda
1/4 tsp cinnamon powder
For toppings
Almonds
Cashews
White til
Preparation :
1. Cut the bananas and put them in the mixer jar
2. Add Let’sLive coconut sugar to bananas and mix it
3. Add vanilla essence and Let’sLive groundnut oil
4. Sieve the wheat flour, maida, baking powder, baking soda and cinnamon powder separately
5. Mix the dry ingredients and wet ingredients separately
6. Then gently put in the dry ingredients into the wet ingredients. Do not mix too much since it will make the cake denser.
7. Apply oil to the baking tray
8. Add the chopped toppings whichever you prefer. We have used almonds, cashews & white til.
9. Bake in Bati oven on low flame for 40 mins OR Bake in preheated OTG oven at 180 °C for 30 mins
10. Delectable and yummy Banana cake using coconut sugar is ready
