Sap, collected from flower stems of rain-fed Palmyra trees is evaporated to make Palm jaggery. This jaggery is grated and sun-dried for 3 days to create this sugar. Palm jaggery is very sensitive to the atmosphere around and that affects the quality of the sugar. Only under the perfect conditions can Palm sugar taste good. Summer Special - Green Mango (Kachha Aam) Salad
Ingredients :
2 green mangoes – sliced into thin strips
1 clove garlic chopped (optional)
1/4 spoon diced Ginger (optional)
½ cup fresh lime juice
1 red or green chillies – chopped (remove seeds) (optional)
1 tablespoon Let’sLive Coconut oil (you can use any of other 2 Let’sLive oils)
2 teaspoons Palm Sugar
2 medium shallots, thinly sliced
½ cup unsalted, dry-roasted peanuts
¼ cup unsalted dry-roasted cashews
½ cup fresh cilantro leaves
¼ cup fresh mint leaves
2 teaspoons toasted sesame seeds

Preparation:
1. Blend chillies, garlic, ginger, lime juice, oil, and palm sugar in a blender until smooth.
2. Mix mangoes, shallots, peanuts, cilantro, mint, sesame seeds, and dressing in a large bowl; season with salt.
3. Fresh, spicy, sour and sweet salad is ready to consume.
