Summer Special - Green Mango (Kachha Aam) Salad

Ingredients :

2 green mangoes – sliced into thin strips

1 clove garlic chopped (optional)

1/4 spoon diced Ginger (optional)

½ cup fresh lime juice

1 red or green chillies – chopped (remove seeds) (optional)

1 tablespoon Let’sLive Coconut oil (you can use any of other 2 Let’sLive oils)

2 teaspoons Palm Sugar

2 medium shallots, thinly sliced

½ cup unsalted, dry-roasted peanuts

¼ cup unsalted dry-roasted cashews

½ cup fresh cilantro leaves

¼ cup fresh mint leaves

2 teaspoons toasted sesame seeds

Salt

Preparation:

1. Blend chillies, garlic, ginger, lime juice, oil, and palm sugar in a blender until smooth.

2. Mix mangoes, shallots, peanuts, cilantro, mint, sesame seeds, and dressing in a large bowl; season with salt.

3. Fresh, spicy, sour and sweet salad is ready to consume.
